Background

This application study illustrates a method for measuring the firmness of ramen noodles. Measuring the bite strength or firmness of ramen noodles is extremely difficult because strands are irregularly shaped, are of different thicknesses, are extremely sensitive to cooking time, and have micro-fractures created by how they are packaged. This method uses SMS A/TRCS Triple Ring Cutting System on a TA.XTPlus Texture Analyzer to shear through a bulk sample of noodles that are placed in the fixture’s 300 ml borosilicate beaker.
