For example, Ingredion’s “Clean Label Flours” resolves the long-standing problem of separation in shelf-stable sauces. Traditionally, starches that are added to sauces are chemically modified to slow their degradation and increase shelf life. Through a heat and moisture process technology, flours can provide the necessary stability, while reassuring consumers that the ingredients have not been chemically altered.
