Love it or hate it, for many of us, Daylight Savings Time has officially started! Most of the US lost an hour of time this past weekend, and many of us may be feeling a bit groggy as we adjust to the new schedule. But what does this have to do with texture analysis? As it turns out, quite a lot!

Recent studies have shown that circadian rhythms (mental and physical changes that affect us over the course of 24 hours) can affect our perceptions of and preferences for specific food textures. In the morning, we tend to seek out crunchy or crispy textures - think cereal or toast. This is because our sensory sensitivity is generally heightened in the morning, making us more perceptive of subtle textures in our foods. Additionally, after a night’s rest, our digestive systems are prepared to handle different textures, such as fibrous fruits.

In the evenings, on the other hand, we enjoy softer foods, such as a creamy soup or a bowl of mashed potatoes. Fatigue can cause our sensory perceptions to decrease, which results in greater enjoyment of meals with less texture variation.
